How to differentiate between these two, when talking about sending stuff? When should you use one over the other? Thanks.

届ける seems to be used more often where the English words "bring" or "deliver" would be used.

How to differentiate between these two, when talking about sending stuff? When should you use one over the other? Thanks.

Probably a dictionary should explain this, but 届ける or 届く are used to mean deliver something at your door, whereas おくる means to send something. So if you go to the post office and send a letter, that is おくる, but when the post office delivers it that is 届ける.
