Are Japanese sentences written with a mix of hirigana, katakana and kanji characters, or does one need to stick to one of these at a time? Sorry if this is a silly question... beginner here...

HI

its a mix of Kanji, Hiragana and Katakana.
You could write everything with just Hiragana and Katakana but it would be quite hard to read. It may not seem like it, but it reading gets actually easier with Kanjis beeing used.

You should start with HIragana and once you mastered those learn Katakana. I think you should actually learn those before you start lessons to get the most out of flashcards and the line by line audio ect.
Once you mastered HIragana and Katakane you should start with Kanji. Its never to early to learn Kanjis + you will benefit from it in the long run.
