It depends on how your name is pronounced, and I'm not too sure I'm getting it right...

I think Wiveke is possibly Norwegian and pronounced "wi" as in "win", "ve" as in "vest" and "ke" as in "keg". And Xu looks like it might be Chinese and could be pronounced like "shoe", "sue" or "zoo"; I'm going to assume it's like "shoe". So, if I'm right, your full name would be:-

My name is pronounced デスティニー in Japanese, although I don't know how to get my keyboard to type that efficiently.

desu becomes デス easily, but I don't know how to type ティ xD I tried te yi but I got テイ every time with no option to change the イ! Dx So I end up having to type desute, stop, and then type yi separately and make it ィ. The nii ニー part is easy lol.

Anyway, as much as I love my name, I don't want to be called デスティニー much. My name translates to Sadame 定め or Unmei 運命 (sometimes Tenmei 天命, which is nice because my parents named me "the word of God", or "Heaven's decree", instead of just "fate") in Japanese. I like Unmei better than Sadame, and I didn't even know about Tenmei until recently; if I hadn't been using Unmei for the last ten years, I might have changed it to Tenmei.

Either way, I prefer to be called Mei 命 most of all because it's short, simple, cute, and I was born in May lol!

My last name is Law; I'm not entirely sure how I should spell that in katakana. ラーウ, perhaps? Or ラー, ラウ, ロー. Even though ロー is low, not law, it's the closest sounding one, to me.

Apparently law translates to 法律 in Japanese! I think it's pretty cool, so I'd introduce myself using it. :)

Secondly, regarding your name typing, please type
De su thi ni-
Then デスティニー comes up.
Thirdly the meaning of destiny, basically destiny means “運命” and 天命indicates “fate” and “providence”. 天命 is also related to the God more.
If you write 命, almost all Japanese native speakers　might read that いのちas kun reading which means “life” .
Finally, your family name should be written ロー.　Japanese people don’t care about Low or Law.

I'm certain it was not meant that way, but your response came across as very hostile to me.

Firstly, please do not refer to me by the katakana of my English name; I mentioned before that I do not like it. I am well aware of the pronunciations and readings for the kanji I have chosen. I know that 命 is typically read as "inochi", not "mei", but it has been my experience that there are a lot of Japanese people with names that are read one way, and 'spelled' another. I'm completely fine with explaining to them the way I pronounce my own. That being said, I think it would be quite endearing if people called me "inochi" sometimes.

Nextly, thank you for telling me how to spell the katakana for my last name. However, the way you delivered it seemed very back-handed. I don't actually know what your nationality or primary language is, so I will presume that you are a Japanese native. Your mechanical responses came across as very personal, rude, and even hurtful to me. In Japan, I have come to understand that formality is always polite and acceptable, and is a safe fallback if you aren't sure whether to be formal or informal. In English, however, being too formal can come across as being cold, uncaring, sarcastic, and/or self-righteous.

I will, however, stop being rude and self-righteous, MYSELF, and hope you can forgive my outburst.

I think your name is スティーベン・ヘルナンデス.

スティーベン　su-ti-i-be-n (where ティ = ti and ー lengthens the vowel)
ヘルナンデス　he-ru-na-n-de-su

In theory you could use ヴェ (ve) instead of ベ, giving you スティーヴェン (su-ti-i-ve-n) but I think that スティーベン is well-established as being the "right" way to do it.

I just have one question though...

You said my last name would be 'ヘルナンデス'. I notice that it ends with "desu", even though it's written in katakana. My question is when spoken would that cause confusion , say if I was introducing myself? (Please bear with me, I haven't learned any kanji yet...)

Example: はじめまして。わたしは スティーベン・ヘルナンデス です。

Would I say "desu" twice, as it's written and just put a little pause between デス and です? Or how would that work...? Because that's what's really stumping me. "/

It might be wired for you to say desu twice. However, it’s necessary.
Don’t worry no one thinks it’s wired in Japan.
Or you can say just スティーベンです casually.
