A couple questions regarding hot and cold.

I recently moved onto Core 200 and ventured from Absolute Beginner to Newbie to check out the difficulty of Newbie lessons. As I began doing my flashcards for the new material I came across additional versions of words, most notably for
hot and cold.

Hot: I've come across 暑い and then 熱い, both being spelled the same but obviously having different kanji attached. So my question is what are the differences between the two if any? Are they used to refer to different things? i.e. weather, water temp?

Cold: I've come across さむい and 冷たい。 I though I saw somewhere that 冷たい was for "really cold, freezing, etc" but then I've seen other flashcards that just say "cold" like さむい does. So like above for Hot, my question is what is the difference between the two and whether or not they are used when referring to specific things?

very good question! :D And you're very correct!
暑い: "hot" in weather. When the (air) temperature is high, it's 暑い.
ex.
今日は暑いです。 [kyou wa atsui desu.] = It's hot today.

熱い: "hot" as used for "hot water". When something you can touch (any liquid, metal, etc.) has high temperature (somthing that can burn your skin, let's say), it's 熱い.
ex.
このコーヒーは熱いです。 [kono koohii wa atsui desu.] = This coffee is hot.

Quite similar thing applies to 寒い and 冷たい 8)
寒い: weather is "cold".
ex.
今日は寒いです。 [kyou wa samui desu.] = It's cold today.

冷たい: temperature of something you can touch is low.
ex.
冬は水が冷たいです。 [fuyu wa mizu ga tsumetai desu.] = In winter, water is/gets cold.

So, you can pair these up:
暑い & 寒い
熱い & 冷たい
