When I was in Japan, I noticed that a lot of the staff (especially in restraunts and train stations) did not completely say arigato gozaimas, it just sounded like they said "gozaimas" in a really long winded sound. Is this because they say thank you so many times in a day they just get a bit lazy, or is it that gozaimas as a stand alone term kind of just throws the kindness/respect your way?

they're probably just slurring it.
in really formal situations, it should be enunciated clearly.
but when you say it 100 times a day, people tend to get sloppy.
also, i think it's a bit more relaxed, so it would be friendly and not rude.

it comes out something like あーざーす or あざーす or あーざーっす
