「Xという映画を見ました」is fine. You normally wouldn't use the Kanji for 言う in this situation because its use is more abstract, i.e. nothing is really being said.

Am I right in saying that 別に can be used on its own to infer phrases like 'nothing in particular', or 'nothing much'? I hear it fairly often, but I've never read anything that explains such a usage. Could you maybe give some examples?

Yes, you can use 別に by itself　as long as the context is clear.

When asked "What did you do last night?" or "What did you eat last night?" for example, you can answer 「別に」　for "nothing in particular" or "nothing special"

Or when asked "What happened"? どうしましたか？

You can also use 別に　as an answer. "Not much"　

As a side note, I use this a lot in class when the teacher asks us what we did or ate or whatever. When everyone else is trying to come up big long sentences on what they did . I just answer this . Because it's usually the truth
