ramen is something very dear to my heart.
there are many kinds of ramen and many ramen shops all over japan. some are bad. some are mediocre. some are exceptional to the point of being a profound mystical experience!

that last category is what i want to talk about.
the real, hardcore designer ramen found throughout japan.

every month books are published with ramen reviews. online, ramen otaku review and detail the best shops. if you don't do your homework before you eat, there's a good chance you're not eating the good stuff. :shock:

Best ramen I've had recently was at ぶぶか in Kichijoji (park exit, right near the station).
But maybe the best ramen I've had since moving back to Japan was in Chiba-ken, at a shop next to the train tracks in KitaNarashino.

Both are shops that I would pass everyday, and they'd almost always have a line regardless of the time of day (or night). That's how I choose my ramen shops- t might be a herd-mentality, but it's worked thus far.

塩ラーメン FTW! Actually most of the ramen shops in my area are pretty weak (I'm no expert, but I asked one, and have adopted his opinion :oops: ). But I eat it anyway! In fact it's sometimes the only palatable item in my company's cafeteria, evidence that just as truly excellent ramen is difficult to make, so too is it difficult to ruin completely...

Also, I was at a ramen shop the other day, and I saw some guy eating ramen noodles with great gusto...from a plate! 出汁なし! He had a bowl next to it, so I couldn't help thinking he was just some idiosyncratic customer who couldn't deal with mixing his noodles with the soup. Is there a dish like this?

つけメン is soupless ramen. you dip the noodles in broth. it's a great summer dish!! :oishii:

isn't that like somen sauce? they put the somen sauce in a cup or something, then you pick up some noodles with the chopsticks and soak in the somen and then eat it.

i love that!!! and my girlfriend makes realli delicious somen!

AAAHHhhhhhhh.....I love ramen....
Marky, if you wanna eat good "tsukemen", I strongly recommend “青葉” in Nakano or Iidabashi. That place is awesome.

But definitely I love Tonkotsu!
