Alright Hitori hase more then 1 meaning,

Is it correct that it can mean:

-Alone
-1 person (For example when you go into a sushi restaurant and say with how many you are) Or am I mistaking the last one with hitotsu?

Well, they're not really 2 different meanings since at their core they're the same thing. If you're alone, then there's only 1 person. If there's only one person, then they're alone. It's the exact same idea but in English it's put into different words for grammar purposes.

一つ is the general counter for 1. It's not the same as the people counter for one, 一人.
