What does なので mean?

I always hear Naomi sensei saying なので in her lessons, what does that mean?

It means "that's why...", or "so..."

eg.

なので、食べる時間がありません。　　

"That's why there's isn't any time to eat"
"So I don't have time to eat"

The assumption is that something was said previously as the reason why there isn't any time to eat.

I believe it's related to "no de" as in "because", but if the noun or adjective before is a "na" adjective or noun, then it changes from "no de" to "na no de". So says my wife.

the construction is actually のだ (no da)

the conjunctive form (～て form) of のだ is ので

な is added because she's probably adding the のだ to an english sentence.
the english sentence becomes nominalized and the copula だ becomes な
then you add ので to continue the explanation.

in this context ので functions like から
なので is like だから

The slight difference between ので and から is that ので presents a cause-and effect relationship as a natural course of events. It sounds softer/weaker and is often used when asking permission or express a reason gently.
I heard it a lot in a Jdorama ('Attention Please!') about a flight attendant school.
