Japanese pickles

Postby becciwhitton5094 » June 22nd, 2014 4:19 am

今日は皆さん

私はBecciです。日本料理が大好きです。ニュージーランドに住んでいてここに漬物を買いにくいですから家に作ることを決めました。ネットでレシピの本を買って今日「大根ほあじょずけ」と言うレシピを作ってみました。大根とサンショウとごま油と醤油です。美味しいかどうかまだ分かりません。夕ご飯とたべてみます。

皆さん、漬物を好きですか?一番好き漬物はなんですか?美味しいレシピを知っていますか?教えって下さい。 :D

Hi everyone

I love Japanese food. I live in New Zealand and its hard to buy Japanese pickles here so I've decided to try making some at home. I bought a recipe book on the internet and today I tried to make a recipe called "daikon hoajo-zuke". Its daikon with szechuan peppers, sesame oil and soy sauce. I don't know yet if it'll taste any good. I'm going to try it with dinner tonight.

Everyone, do you like Japanese pickles? What's your favourite pickle? Do you know any good recipies? Please tell me! :D

由紀先生、ありがとうございます。一番好き食べ物はなんですか? 日本人はよくご飯と酒と弁当と漬物を食べるでしょう?

Hi Yuki, thanks for your reply. What's your favourite food? Japanese people often eat pickles with rice, or alcohol, or in bento, right?

ちょっと質問がありうます。In English, "recipe" can be both a direct object and a tool. For example, "I will make this recipe" and "I will make something using this recipe" are both correct. In Japanese, can 「レシピ」ever be used as a direct object, i.e.「レシピを作る」, or it is always a tool, i.e. 「レシピで作る」?

You said that 「夕ご飯とたべてみます」 should be 「夕ご飯にたべてみます」. The meaning I was trying to express was that I would eat the pickles with my dinner, i.e. as part of the meal. Can I use "夕ご飯と" to express this meaning, or is this particle use incorrect?

ちなみに、手作り漬物が良かったんです。サンショウの味が美味しかったです。でも、ちょっと辛すぎ (too salty) だと思います。

Becci san,
はい、日本人よくご飯と酒と弁当と漬物を食べますね。
私はすしが一番好きです。
Regarding the first question
When you write a recipe, you can say “レシピを作る”.
However, when you cook something referring to a recipe, you should say “レシピで作る”.
The second question, I can understand what you mean however,
the particle “と” should be used for people. For example, I have dinner with my friend “友達と夕ご飯を食べます”.
“with my dinner” is 夕ご飯に.
サンショウの味と香りはいいですね。
By the way, 辛い has two meanings, salty and spicy.
しょっぱい and 塩辛い are obviously “salty”.

Hi everyone. My pickle making adventure is continuing. Recently I tried to make a pickle called "bettarazuke". It's daikon picked in rice, shio kouji (an ingredient made from fermented rice), sugar and mirin. Yesterday, after pickling it for one week I gave it a try, and it was delicious. The flavour is a little bit spicy and a little bit sweet. My recipe book says the flavour is best after two weeks so I'm looking forward to trying it again next week.

Today I made a nukadoko. Nukadoko is a rice bran mash used for making tsukemono called nukazuke. You make nukazuke by burying vegetables in the nukadoko for a few days to a few weeks. Sounds interesting, right? I don't know how the end result will turn out but I'm looking forward to finding out. :)

Becci san,

漬物作り、本格的ですね。すごい!

I corrected your sentences.

今日は皆さん。漬物を作るのを続けていますよ。Native Japanese speakers don’t use アドベンチャー here.
最近「べったらずけ」と言う漬物を作ってみました。Correct!
米、しおこうじ、砂糖とみりんに漬けてある大根です。 When you use いる, the dakon is making tsukemono.
昨日は一週間漬けていた物を食べてみました。食べるis an transitive verb so it needs an object.
美味しかったですよ。Correct!
味がちょっと辛いくてちょっと甘かったです。と must be between nouns and can’t be put between adjectives.
レシピ本は「二週間まで味は一番良いです」と言っていますから来週 また食べてみることを楽しみにしています。You don’t need the particle にafter 来週 and the particle が before楽しみ must be を.
今日は糠床を作りました。Correct!
糠床は糠漬けの漬物を作るための糠です。Unfortunately native Japanese speakers don’t unserstandマシュ.
数日から数週間まで糠床に野菜を埋め込んで糠漬けを作ります。 Verb conjugation te-form
面白そうですね?
どうなるか結果は分かりませんけど楽しみにしています。

Becci san,

どういたしまいして。
そうですか。おばさんみたいでもおいしい漬物ができればいいですよね。 :D
I see. If it’s like a middle aged woman, if your tsukemono is delicious, it’s good isn’t it?

私のきゅうり糠漬けは美味しいですよ。 最高 :D

写真を撮ったけどここに貼られなそうです。ポストに写真を貼ることが出来ますか?

My cucumber rice bran pickles turned out delicious! Success :D

I took a photo, but I don't seem to be able to paste it here. Is it possible to attach pictures to forum posts?

Hi becci,

Thank you for posting again!
We would love to see that picture.
You can add it as an image as part of a website: Image

Hope that helps. :D

Hi Laura

Sorry to have to ask for further instructions but how would I add a picture as part of a website?

Also, what is the word for "mold" in Japanese? (You might guess from that question that my next pickle story isn't going to be good news :P)

Thanks
Becci

You can't actually paste an image into a forum posting. But you can create a link to any image anywhere on the Internet, and that image will be displayed in your posting. There are two things you have to do:-

First, you have to load the image up to a public web server. This can be any web server that displays images, such as Facebook, Instagram and so on.

Next you need to get the web address for that image. Use your browser to view the image you uploaded and right-click on the image. Choose the Copy Image Location option (Firefox) or Copy shortcut in Internet Explorer.

Finally you create your posting. Paste in the link that you copied and then select it so that it's highlighted. Then click the Img button in the row of buttons above the box where you type your posting. You can see what the final posting will look like by using the Preview button.

There's also a description of how to add images to your postings at JPod101 Forum FAQs.
