Hello, how would I pronounce my name, Joshua Carter as well as write it?

I'm also hoping to have a hanko made for myself if anybody could help point me in the right direction I'd be very grateful, Arigatō gozaimasu.

Joshua has these Japanese syllables; jo shu a -> ジョシュア
Carter has two long syllables; ka- & ta- -> カーター

If I were to have a hanko seal made would I just use my last name? Ka-ta-?

We (Japanese) have hanko with family name, usually. So, I think you can have it made with your family name
only, or perhaps both. But I'm sure hanko for ジョシュア・カーター will be pretty big, like a company stamp 8)

Peter is　ピーター　(pi-i-ta-a). I don't think it means anything.

Usually foreign names don't really have meanings in Japanese; we simply "transcribe" them phonetically :D

レドリー(redorii) sounds more right as you said!
But I think エヴァ (eva)is more suitable for Eva. :D
