I'd recommend that you get some sort of children's book or manga at your level. The lessons here aren't always a good way to judge your progress. The translations get stuck in your head, so it's hard to tell if you can understand the Japanese dialogue or just remember the English. Also, at the rate you're speeding through lessons, you'll forget a lot of vocabulary and probably the grammar too, so outside reading is a good way to reinforce what you've learned.

簡単 is a な-adjective, so to link it to a noun you need to add な after it. You add の to link nouns.
例えば is an expression meaning 'for example', usually used at the start of a sentence. It is a conditional form of the verb 例える meaning 'to liken, to compare', and is one of many verbs whose ます-stem can be used as a noun, so 例え means 'example'.
Lastly, somebody knowing something is considered to be a state, so in Japanese the present progressive form is used しっている, literally 'are you knowing'. This is quite a confusing aspect of Japanese, and probably something you learn from familiarity.
As for reading materials, since you've only been studying a short time, I'd look for some really simple manga or perhaps picture books. The best bet would be to go to a bookshop and have a look to see what you can read.
